Is a soldering iron my best bet?
I am planning a piece of art which will be made mostly of copper-plated mild steel welding rods (1.6mm dia.) laid out in a grid-style pattern with other bits of copper attached to it in random fashion. Before I dash out and buy a soldering iron I just wanted to ask if this is the best solution for what I want to achieve. The piece will be wall-hung, so it will not need to carry significant weight. If anyone can advise I’d be grateful.

I would go with a soldering Iron but make sure it is atleast a 30w
For a light weight wall hang solder iron is the best bet.
I am not sure what size your metal rods are so it would be hard to determine how heat dissipation you will have. For that type of work a solder gun usually works very well but if the rods are very light weight a soldering iron should work. Reading your description it sounds like there will not be the need for great tinsel strength so 60/40 solder should do the job nicely. A little solder paste type of flux works well for that type of application (I do not normally recommended solder paste for electronic soldering.)
